When the grape harvest in Dão ends, only the grapes that will give rise to this Late Harvest remain. It is the time of autumn sun, the first rains and humidity, the leaves that, in Santar, gain such contrasting colors and patterns. Only in the best years can we produce this wine, which we call Outono de Santar, as it always brings to mind the unique magic of that time of year in the emblematic village of Santar. Vinification of the Outono de Santar Late Harvest 2013 Wine: total destemming, gentle pneumatic pressing with 20% utilization of the grape juice, natural static clarification, alcoholic fermentation in « second use » barrels at 20°C. Aging: 6 months of battonage with 12 months in second use barrels.
